Time for another party recipe- quick and crunchy coleslaw!
Confession: I used to hate coleslaw. You might wonder what there is to hate about coleslaw- it’s so benign, flavorless, and dare I say, flaccid…
And that’s exactly the problem! Life is too short to eat bad food and the coleslaw that many restaurants serve up is downright depressing. Coleslaw doesn’t deserve to be drowned in a river of mayonnaise malaise.
Light dressing + crunchy veggies = coleslaw done right.
I’ve been making some version of this slaw for years and I have yet to find someone who doesn’t like it. The secret to this dish is the broccoli slaw, which doesn’t go limp when dressed. It’s great on its own or on top of a brisket sandwich or fish tacos!
Want to personalize your slaw? Try one of these variations!
1. Need some spice in your life? Throw in a 1/4-1/2 tsp of chipotle pepper powder into the dressing before tossing with the broccoli slaw.
2. Short on sweetness? Shred up a cup or two of carrots and toss in a cup of raisins.
3. Lovin’ onions? Chop up a few tablespoons of scallions and mix in.
Quick and Crunchy Coleslaw
Three 12 oz. bags broccoli slaw
1/2 cup real mayonnaise (This is not a time for Miracle Whip, y’all. Set it down and walk away.)
1/4 cup + 2 tablespoons rice wine vinegar
1/4 cup olive oil
Freshly ground black pepper to taste
In a large bowl, add the mayonnaise, rice wine vinegar, and olive oil. Whisk thoroughly to combine. Add pepper, to taste. Throw in the broccoli slaw and toss to coat. I do this about 30 minutes in advance of serving.
Makes ~20 servings. For a smaller crowd, simply halve the ingredients for the dressing and add 1-2 bags of broccoli.
