Even though my husband would be happy to eat only beef and tortillas for dinner, I force him to eat his vegetables every day. This salad dressing pairs perfectly with simple greens and some ground beef tacos. A little citrus-y, a little spicy, it’s a fresh burst of summer flavor we all need to get through March.
- 1/8 cup salsa
- Juice from 1/2 of a small lime, ~1 1/2 tablespoons
- 2 tablespoons olive oil
- salt and pepper to taste
- Combine all ingredients and whisk thoroughly. Dresses ~6 cups of mixed salad greens.
