I look forward to the arrival of Cooking Light to my mailbox every month. The magazine is full of delicious and easy recipes that cut calories and fat without sacrificing flavor. Here are two of my recent favorite recipes:
This dinner took a little extra effort but was loved by all of us. Sam devoured a small hamburger and the goat cheese mashed potatoes I made alongside. I recommend making the goat cheese mashed potatoes an hour or so before you want to serve dinner- they reheat well. The hamburger steaks cook up quickly.
Goat Cheese Mashed Potatoes
8 cups red bliss potatoes, cut into bite-sized chunks
5 tablespoons goat cheese
1 tablespoon olive oil
salt and pepper to taste
In a large pot, boil the potatoes in unsalted water until tender. Once they are tender, drain them and add the potatoes back to the hot pan.
Add the goat cheese and olive oil to the potatoes and mash until smooth. Season to taste with salt and pepper.
My carnivorous husband liked this vegetarian sandwich so much he requested a repeat of it for this week’s menu. The meatiness of the Portobello mushrooms combined with the savory red pepper sauce and goat cheese turns this sandwich into a main dish.
