The husband and I are back on the South Beach Diet, but really, I’m just trying to change my lifestyle. Turns out eating bread and cereal all day long makes you gain weight and feel crappy- who knew?! Considering I was a vegetarian for a little bit before having Sammy, there has been a huge lack of vegetables in my diet lately. South Beach was an easy way to bring vegetables and protein back into my life.
This isn’t exactly a summer dish, but it is incredibly delicious and totally worth turning on your oven. Love the substitution of edamame for peas- I’m a pea hater, so this was pretty awesome. Plus edamame are packed with protein- peas are packed with sugar. Booyeah, peas!
