I mentioned last week that I have a new project going on. I recently checked The Back in the Day Bakery Cookbook out from our local library and immediately fell in love with it. It’s a celebration of Southern comfort food with a vintage flair- sounds like a perfect match for BettyCupcakes, right? I’m going to be cooking every recipe out of it. I mapped it all out- it’s probably going to take me two years. That’s two years of fabulous eating, y’all!
First recipe to tackle- Buttermilk Cornmeal Pancakes!
Every weekend, we have a big breakfast as a family. Because of work/playdates/life it’s rare for all three of us to have a meal together during the week. Usually we chow down on piles of whole wheat pancakes and eggs.
This weekend, however, we were hosting my family from Texas. If you’re from Texas, you’ve probably grown up on cornbread. Real cornbread- dripping with butter and served alongside fried chicken or smoked brisket or grilled sausage. It’s definitely one of my favorite foods- it’s good hot out of the pan or cold for breakfast.
These Buttermilk Cornmeal Pancakes from the Back in the Day Bakery Cookbook were the perfect pancakes to serve to Texans. They have a whole stick of butter in them, which makes them rich and greasy, in a good way. The pancakes come together quickly and after a quick fry on a buttered griddle, they have crisp edges and a sweet, tender middle. I served them alongside some bacon baked crisp in the oven and generous pours of Vermont maple syrup.
