Happy Thursday, y’all!  How’s the week been so far?  I’ve spent this week playing chauffeur: taking the husband to work, carting Sammy to play dates, running errands.

The fact that my washing machine died on Sunday has really freed me up from house work.  I’d be lying if I said I wasn’t afraid of our growing piles of laundry, but it’s been nice to just ignore it for a week.

I’m still baking away, trying all the recipes in The Back in the Day Bakery Cookbook. For my brother in law’s graduation party, I made Drunk Blondies.  It seemed appropriate.

Drunk Blondies are brown sugar bars with bourbon, chocolate chips, pecans, and coconut folded in.  The bourbon flavor is super subtle, so when I make them in the future, I will experiment with bumping it up to 1/4 cup or more.  The recipe only calls for 2 tablespoons of bourbon so I bought a nip of Maker’s Mark.  Note: a nip contains 3 tablespoons of liquor.  Plus, they’re adorable. Drunk Blondies | Back in the Day Bakery Cookbook | BettyCupcakes.comI’m not usually a fan of nuts in my baked goods, but I make an exception for pecans.  Must be the Texan in me, but I love pecans.  I remember picking them off trees at a ranch outside of Dallas.  They’re so buttery and rich.  By far, pecans are my favorite nut.

Drunk Blondies come together quickly.  They bake up in a half hour and leave your house smelling of brown sugar and butter.  What could be better than that?

  • Those look wonderful. I don’t usually use liquor. It’s not that I have a problem with it, but rather that I just don’t come across recipes that call for it.

      It was a curve ball for me, too! That’s why I bought the nip- didn’t want to commit to an entire bottle of bourbon when I don’t actually drink it. More of a wine girl.
