I know we’re not supposed to eat breakfast in the car or standing up or at our desk at work.
But that doesn’t mean we don’t do it. If my choice is between making eggs and bacon and eating it at the table or sleeping an extra 20 minutes after a long night, I’m choosing sleep.
Breakfast eaten on the go can still be nutritious and yummy. Thank goodness for muffins and granola bars!
I haven’t met a muffin that doesn’t freeze well. That means that you can make a huge batch when you have a free moment, cool them, place them in a zip top bag, and pop them in your freezer. Then, when it’s time to eat, you can zap one in the microwave for thirty seconds to defrost. Or, if you were packing it for a lunch, you could just let it defrost in your lunch box until it was time to eat.
Here are some great muffins recipes that I’ve come across lately. Any of them would make a quick and filling breakfast on the go.
