I feel like I swing between two very different culinary perspectives:
- the hippy, crunchy Massachusetts wife and mom who makes nutritious meals from whole foods
- the indulgent Texan who makes food that’s sweet, butter-y and all together decadent
Today’s recipe falls under the healthy umbrella. I make this spinach mango smoothie about 5 times a week. It’s the only surefire way to ensure Sam gets some greens and I just really like it. Despite my love for sugar and butter, I really do enjoy healthy foods that taste good. This combination of spinach and mango doesn’t need any extra sugar or honey. I buy the frozen mango from Trader Joe’s and it’s very sweet and just a little tart.
I also think this smoothie won major points with the wee one due to the frozen factor. Nothing feels better on a sore, teething toddler’s gums than something soft and cold.
You’ll need a straw sippy cup for this one- it’s too thick for anything else. Sam gets to drink his out of his special Mickey Mouse sippy cup that’s reserved for smoothies only. I’m not above using The Mouse to get my child to eat better.
I’m sure someday he’ll realize it’s green and full of salad, but for now, he loves pushing the buttons and clinging to me koala-style while the blender works its magic.
Spinach Mango Smoothie
- 3 cups loosely packed baby spinach leaves
- 1 1/2 cups frozen mango, cubed
- 2 cups milk (I’ve used unsweetened almond milk and cow’s milk- both are great)
- 1 tablespoon chia seeds, optional
- In a large blender, put the spinach in first then add the mango on top.
- Pour in the milk and then sprinkle in the chia seeds.
- Blend on high until smooth- 2-3 minutes, depending on your blender.
Serves 1 mama and 1 toddler (one 16 oz. serving for mom and one 8 oz. serving for the wee one)
