Pumpkin Crunch Bars from The Back in the Day Bakery Cookbook | BettyCupcakes.comEveryone gets all excited about January 1st, but for me, the beginning of the year starts in September.  From the crisp notebook paper to the freshly sharpened pencils, every September feels like a new beginning.

Before I was a mama, I worked in schools for 6 years.  I started off in higher education administration and ended there, with a stint of teaching middle school English thrown in the middle.  The excitement that I feel when the doors open on the first day of school is downright nerdy.  When the school buses started rolling through town this year, I was giddy with anticipation.  What would this year bring me?

A few friends are celebrating their own new beginnings this fall- one couple bought their first home and another couple brought home their second son.  I can think of no better way to celebrate these milestones than with something baked with love.

The Back in the Day Bakery Cookbook served up the perfect treat for these occasions: the Pumpkin Crunch Bar.  Billed as their alternative to traditional pumpkin pie, this delight tops shortbread crust with silky, smooth and sweetly, spiced pumpkin custard.

At first I was suspicious of the name.  Pumpkin crunch bars?  Where, pray tell, was this alleged crunch?  There was no streusel topping, no pecans hiding inside.  But, yes, the shortbread crust is twice-baked and utterly crisp.  These pumpkin bars are aptly named.

Might I offer another name for them?  The “I Can’t Stop Eating Them And I Don’t Want To Give Them Away” bars.  Just a suggestion.

    I still think of September as being the beginning of the year, too. It feels right to me. January 1st is in the middle of winter – how can the beginning of something happen in the middle?
