These cornmeal cookies are so very Italian.
Refined, yet simple. Sweet, but not cloying. Elegant without effort.
When I grew up, I want to be just like them.
The Italians, that is…not the cookies.
The crunchy cornmeal adds an earthy sweetness to the buttery cookies. These cornmeal cookies are the perfect accompaniment to a strong cup of coffee, espresso if you’re lucky.
