In food news, major dietary changes going on in our house lately. I feel like we do this every couple of years, really clean up our eating, and then just gradually slide right back into the old bad habits. I want to stop this cycle to set a better example for the wee one. Being a grown up kind of stinks sometimes.
A few months ago I stopped eating dairy (almost entirely, occasional slices of birthday cake notwithstanding) and now we’re changing it up again to tackle some heartburn issues. Acid is not your friend!
I’m not going to go do the Whole 30 diet or go Paleo or even vegetarian. I’m just going to focus on whole foods that make us feel good, whatever they may be. As much as I love sugar and carbohydrates, they just don’t love me back.
Plus, I need to cut back on my salt intake and drink a whole lot more water. I’ve been waking up with puffy
eyes and a dry mouth. I’m really longing for those care-free college days where I ate pizza at midnight and didn’t even blink.
Other things influencing our meal plan: Lent! It’s Ash Wednesday on March 5 and we’ll be abstaining from meat on holy days and Fridays through the Lenten season.
Weekly Meal Plan
Sunday: Leftover Sausage and White Bean Soup over brown Basmati Rice (I use this Pasta e Fagioli recipe from Good Housekeeping as my base recipe, but omitted the pasta and used chicken sausage instead).
Monday: Baked chicken with the South African Smoke Seasoning from Trader Joe’s + brown Basmati rice & peas + sweet potato fries
Tuesday: Broiled Alaskan cod with cauliflower puree
Wednesday: Chickpea tacos with avocado and salsa + Quick and Crunchy Coleslaw
Thursday: Leftovers/ Figure it out
Friday: Tuna cakes made with carrot puree + creamy Brussels sprouts
