Did y’all know that some people HATE bananas? (I’m looking at you, Pioneer Woman.) How is that even possible? How does the world continue turning while banana haters and banana lovers live side by side?
These are the kinds of real world problems that I think about.
Thankfully, the good people at The Back in the Day Bakery are banana lovers. In fact, they love bananas so much they cooked up this wonderful brown sugar banana bread and then put the recipe in their cookbook.
Perhaps you’ve grown a bit tired of your regular banana bread recipe. Cinnamon, sugar, maybe some vegetable oil, butter, eggs. *yawn*
The Brown Sugar Banana Bread from the Back in the Day Bakery Cookbook adds a funky spice to the basic blend: mace. Have y’all tried mace yet? It’s actually the outer covering of nutmeg seed. I think of it like nutmeg on steroids. Mace is stronger, more aromatic, warmer, and generally nutmeg-ier than nutmeg. I’m loving it in baked goods these days. My ginger cookies might never be the same.
This Brown Sugar Banana Bread recipe only calls for (duh!) brown sugar so the flavor is really deep and almost caramel-like. The original recipe calls for pecans, but because my husband worships at the altar of chocolate chips, I used them instead.
Bananas + chocolate = love. (This is the only kind of math I do- what up, English majors?!)
Bananas- YES or no?
Do chocolate chips truly make everything better? Discuss.
