It’s time for a little segment I’d like to call: Good News/Bad News.

Good News: I got a new job!  The pay is great/the hours rule/the co-workers seem super friendly.  The wee one is starting school where he’ll get to play all day.

Bad News: I got a job…the wee one is starting school…

Weird, right? To say I have mixed emotions about the changes going on right now would be an understatement.  I’m in a state of constant flux- happy/smiling/blessed/scared/crying/sad.

I don’t think there is a mom on the planet that couldn’t empathize with me right now.  While I have enjoyed (almost) every minute of these last two years at home with Sam, as he gets older it’s become more clear that he’s ready to tackle the next step in his life: school.  Little man loves other kids, being silly, singing songs, dancing, coloring…ya know, all those things school offers.  I’ve been tempted to try and concoct some kind of at-home preschool situation, but that is just not for me.

To be honest, I’m ready to go back to work.  I miss my work daily routines, chatting with coworkers, problem solving.  I’m so thankful that I found a job where I’ll be challenged and supported.

I plan on keeping BettyCupcakes going for the foreseeable future, posting 3-4 times a week.  This is my creative outlet and I truly love writing here.  So, don’t delete me out of your favorites just yet!

On to the meal plan!

Notes on this week:  Meat-free Friday due to Lent.  Freezer veggies because they’re easier (and I’ve got a stash that needs to get used up).  Quinoa twice because it’s awesome.

Sunday: Chicken with eggplant and zucchini over quinoa

Monday: Rachael Ray’s Cashew Chicken and brown rice

Tuesday: Pulled Pork with Freezer Vegetable (i.e. four-veggie blend from the freezer, etc.)

Wednesday: Vegetarian Tortilla Soup with Sweet Potato Pancakes

Thursday: Freezer meal/ take out/ figure it out- It’s my first day back to work!

Friday: Roast Salmon with Fake Out (Quinoa) Risotto  OR Tuna Cakes (it’s a new recipe I’m working on!)
