I’m trying to ease into the working mom gig smoothly, but let’s get real.  Our house is a disaster, I’m tired, and the wee one has been more than a little cranky lately.  Change, even for the better, sucks.  I’ll be glad when we’re firmly into our new routine and I feel a little less crazed.

I think I did about 6 loads of laundry this week + all the ironing.  Times like this I wish I was Molly Weasley and could wave an actual magic wand.  *nerd alert*

The wee one has started giving his stuffed animals rides around the house in the various boxes we’ve collected.  His other new favorite trick: pretending he’s blind.  Dude is a character.

Even though we’ve lived in our new house for almost a year, we finally got around to painting the dining room.  Begone, yellow beige!

Thanking the good Lord for a stocked fridge.

In an effort to find some more time during the week, I’m ramping up the weekend prep and looking to use my trusty Crock Pot more.

Weekly Meal Prep

  • Cut up vegetables for dinners
  • Make a fruit salad with pears, oranges, and strawberries
  • Bake brown rice for fried rice
  • Assemble chicken thighs with figs, olives, and lemons in a bowl for easy transfer to Crock Pot tomorrow morning

Breakfasts

Sarah- oatmeal, hardboiled eggs, green smoothies with protein powder

Sam- frozen waffles, eggs, green smoothies

Nick- hardboiled eggs, English muffins

Snacks

Hummus + carrots/cucumbers, roasted sweet potatoes, popcorn, raisins, fruit

Lunches

Sarah- leftovers/salads

Sam- school serves him lunch!

Nick- ?  lots of work obligations this week

Dinners

Sunday: Crock Pot Pork Shoulder with sweet potato fries and salad- based this dish on my Sweet and Spicy Crock Pot Pork Roast

Monday: Crock Pot Chicken Thighs with olives, figs, and lemon with quinoa and frozen vegetable medley, based on this

Tuesday: Veggie Fried Rice- based on my Tofu Fried Rice recipe minus the tofu

Wednesday: Pork Tacos using the leftover Crock Pot Pork Shoulder and Quick and Crunchy Coleslaw

Thursday: Leftovers/figure it out

Friday: Roasted salmon + black bean and zucchini pancakes
